Turkey Pot Pie

Most chicken recipes can be substituted with Turkey.  Here is a Turkey Pot Pie recipe.  Personally, I like biscuits, so here is how I make my Turkey Pot Pie.


Turkey Pot Pie

4 cups Turkey Stock

1 T. chopped fresh parsley

1 cup chopped onion

1 cup sliced carrots

1 cup cubed potatoes

1 cup green beans

1 cup peas

1/3 cup flour

½ cup water

4 cups chopped cooked turkey

1 recipe Quick Biscuits (Below)

 

Combine chicken stock, parsley, onion, celery, carrots, potatoes, and beans in a large stockpot.  Simmer until vegetables are tender.  Add peas. Mix flour with water in a small bowl.  Stir into the mixture.  Simmer until thickened, stirring frequently.  Add turkey; remove from heat.  Prepare Quick Biscuits as directed.  Spoon turkey mixture into a 3-qt casserole.  Top with biscuits.  Bake at 450 degrees for 15 min.; reduce oven temperature to 350 degrees.  Bake until biscuits are golden brown.


Quick Biscuits

2 cups flour

1/2 tsp Salt

2 tsp baking powder

1/2 cup butter or lard

2/3 cup milk

Combine dry ingredients in a bowl. Cut in butter until crumbly.  Add milk, stirring until the dough forms a ball.  Knead gently 5-10 time-do not overwork or biscuits will be tough.  At this point, I get a cookie dough scoop, which is about 2 Tbls. and scoop the biscuits on top of the turkey mixture.

 

This is a hearty, economical, and nutritious meal.  You can make it ahead of time and refrigerate it until you are ready to bake.  You can also use a pie crust instead of biscuits.
